Palak Paneer Rice

Spinach & cottage cheese rice with green veggies

This is where the saga of healthy food starts in my life. I was just few days into making healthy food, as it happened I was supposed to make palak paneer sabji with paratha but I was too tired to make paratha so I thought why don’t I make palak paneer rice as I have got everything on hand with me, I just needed to soak rice and boil it while I cook palak paneer gravy on side. So plan was decided, I tightened up my duppata like a scene of Karan johar movie (lol... too cheesy) well just fold up my sleeves and started to work on my another healthy dinner.

I was midway there and thought only rice won’t be good for dinner so was wondering what I should make for side that will go well with rice and is healthy yet easy to prepare. My crazy mind started finding options but in my pantry I only had cucumber, beetroot and carrot so what to do? I thought for few min and came up with plan.

Rice was cooking on one side and on the other side gravy. Mean while I started grating all three ingredients one by one. I had few extra chopped onions left so I jumbled them up with cucumber and curd and made a raita out of it. So here I was with beetroot carrot salad, the raita and palak paneer rice. Tadaaa..! Everything tasted good. But the verdict of my best critic was yet to come.

Meanwhile, there was still light peeping through my window. I was high on adrenaline, that hormone which makes you feel strong emotions and excitement. So I put on the music on high beats and started plating to take pictures while my little man crawling here and there between my legs. Within few minutes task was done. But the energy was still up so I uploaded the pictures on instagram. Next day to my surprise, this picture was on vogue digital version with other bloggers I follow. Now this was thrilling as much as motivating.

And yes the man of the house (my critic) loved the dinner; he is one of those few who don’t fancy salad and that too having beetroot in it. but he loved it so much that he finished it all. And I was so happy to see him hog away everything. It was an achievement.

Palak paneer rice

  • 1 cup cooked basmati rice
  • 1 cup square cut paneer
  • 1 cup fresh spinach puree
  • 1 half sliced onion
  • 3 to 4 finely chopped garlic buds
  • 1inch grated ginger
  • 1 finely chopped chilli
  • 1 finely chopped capsicum
  • ½ cup frozen peas
  • Few finely chopped French beans
  • 1 tsp jeera/cumin seeds
  • 1 tsp coriander powder
  • 1 1tsp cumin powder
  • 1/2 tsp garam masala( as per taste u can add more)
  • 3 tbsp oil
  • ¼ cup water
  • 1 tsp cream
  • salt to taste

Method

  • Heat 1 tbsp oil in nonstick pan (preferably). Add pieces of paneer one by one to roast them till brown on both side and keep it aside in a bowl
  • Add remaining oil to the same pan and add cumin seeds as it sizzles ,add asofetedia, onions, ginger, garlic, chilli. Cook for a minute then add peas , french beans, water and salt . Cover it and let them cook for a while till slightly soft.
  • Now add capsicum and toss for a minute. Finally add spinach puree , garam masala, coriander powder & cumin powder. Cook for 4 minute without covering or  green colour will fade away. 
  • Lastly add paneer pieces (leaving few for garnishing), cream. Mix well then add boiled rice. Carefully mix it. Serve hot with raita accompanied with a salad for complete healthy meal.

Health benefits:

  • I have used all green vegetables instead of only using spinach and paneer so that in one portion one can get all veggies and carbs both.
  • Adding raita is good way to add protein and calcium in your diet. Also if you add veggies like cucumber onion mint etc... instead of bondi is more beneficial and in a way it adds up to your vegetable intake of the meal.
