Moong dal Panki

A gujarati steamed snack with flavour of fresh banana leaves

Since few months I am trying to inculcate healthy food habits , as i wrote in my previous blog post to make 100 healthy recipe just to keep myself healthy yet inspired to keep doing it and i have been enjoying the process of cooking to plating to photographing it thoroughly. But since then I also wanted to start a blog where i could keep record of what I make on every day basis so I could keep going back and remake it.

Finally I have decided to write down my first recipe, here I start it with simple yet healthy PANKI , as this space i am using is mostly for healthy recipes

Moong Dal Panki

A traditional gujarati snack usually made using rice flour batter and toasted between banana leaves to bring that unusual flavour you get. So twist here to make it healthy I am using moong dal instead of only rice flour

INGREDIENTS:

  • 1 cup soaked yellow moong dal
  • 2tbsp rice flour
  • 2-3 green chillies
  • ½ inch ginger
  • ½ tsp asofetdia
  • ½ cup curd
  • Few finely chopped coriander leaves
  • Water as needed
  • Salt to taste
  • oil to grease
  • cut & washed banana leaves

Method:

  1. Grind soaked moong dal , green chillies and ginger finely.
  2. Take curd in bowl then add asafoetida, salt & pepper, rice flour, and chopped coriander. Whisk it  thoroughly. Now add moong dal mixture to it and whisk again.
  3. Lastly add water little by little as batter should be smooth and pourable
  4. Keep the batter aside for ½ hour , meanwhile cut the banana leaves to desired shape through scissor and grease the with oil on one side
  5. Now heat the skillet on low flame ,place one leaf(oil side up) pour 1-2 spoon of batter and press it down with other leaf(oil side down) , and let it roast on both the sides till the leaves get brown
  6. Finally serve it hot as it is with leaves accompanied with mint chutney.

Health Benefits:

  • Moong dal contains very good amount of protein while being very low on carbs, also very easy to digest than any other dal. 
  • Asofoetida (hing) will work as a bowel cleanser so don't worry if you think this snack can give hard time to your stomach.

Tip: you can also add more veggies like chopped spinach, grated carrot ,dil leaves , etc. as you like it to make it more healthy
